How long do spring roll skins last?

I used to buy them from an Oriental Market when I lived in California. I was told from the store owner that they had a shelf live of 7-10 yrs. (His wife said "they last forever") I would assume in either case this was the unopened bag. They would need to be refrigerated and used soon after opening them.

Is it safe to eat expired canned food?

In most cases no. Canned food usually has a shelf life of 2 years and it's best to dispose of such foodstuffs. Also beware of any damaged cans or ones that have a bulge in them. These are certain signs of contamination and should be disposed of quickly and without question. When manufacturers produce a product they put an expiration date on it. This does not mean the food is not good after that date because there is a large safety factor added to the expiry date so the food is still good. The message on the container usually says something like "Best if used before 2/2/2009". Although the food is still good, the longer it stays on the shelf the more likely the flavor and taste will diminish. As the post above indicates, if there is visible damage to the can such as bulging it is probably contaminated with a gas generating microorganism and should be discarded without opening.

How does freeze-dried coffee differ from standard instant coffee?

There are two main ways of producing instant coffee - freeze drying and spray drying. In freeze-drying, brewed coffee is frozen into granules, which are then placed in vacuum chamber, where the water sublimates (evaporates w/o liquifaction). In spray-drying, brewed coffee is sprayed in tower and dried by hot air in the matter of seconds. Freeze dried instant coffee advantage: higher quality product, better preserved flavor. Spray dried instant coffee advantages: faster and cheaper.

Can you freeze raw peanuts?

Yes you can, but it would make little difference to just refrigerating them. The reason is because peanuts are high in fats, and fats cannot freeze. Meaning, what is limiting the storage ability of raw peanuts is the oxidation on the unsaturated fats. Freezing will slow it down, but refrigerating will still give you about 9 months. If you want long term storage, I would consider putting them in a vacuum pack along with a couple 2000cc oxygen and moisture absorbers. For even longer term storage, put some dry ice in a brown paper bag and put it in a food grade bucket. Next, put your raw peanuts over the top of them along with a couple 2000cc oxygen and moisture absorbers. lay the lid over the top, and when you think all of the dry ice is gone, then just press the lid on firmly. If you see budges, then just lift one corner to let the excess out. This method should give you 2 to 3 years of storage.

no. nuts don't really freeze like other foods. If they are frozen and your using them in recipes it wont change anything but if your eating them it might make your teeth cold!:)

It can be stored on the shelf in an airtight container in a dry area that is not exposed to extreme temperatures. Dried pasta can be stored indefinitely and still be safe to eat but the USDA recommends storing dried pasta for no more than two years to obtain the best quality.

Will cheese slices spoil in refrigerator?

Slices tend to dry out faster than cheese blocks- be sure they are tightly wrapped with plastic wrap. Eventually they get hard and not fit to eat- they do not exactly spoil to the point that they would make you sick to eat.

Can you put canned food in the fridge unopened?

If you plan to use the canned food to make something that should remain cold, pre-chilling it in the fridge is a good idea; for instance, tuna for tuna sandwiches or canned fruit to use in gelatin desserts or canned cranberry sauce to serve with turkey. Long term refrigerated storage might not a good idea since the high moisture of a refrigerator could cause the cans to rust.

How long do foods such as pasta dried beans and rice last?

Brown and white rices store very differently. Brown rice is only expected to store for 6 months under average conditions. This is because of the essential fatty acids in brown rice. These oils quickly go rancid as they oxidize. It will store much longer if refrigerated. White rice has the outer shell removed along with those fats. Because of this, white rice isn't nearly as good for you, but will store longer. Hermetically sealed in the absence of oxygen, plan on a storage life for white rice of 8-10 years at a stable temperature of 70 degrees F. It should keep proportionately longer if stored at cooler temperatures. Stored in the absence of oxygen, brown rice will last longer than if it was stored in air. Plan on 1 to 2 years. It is very important to store brown rice as cool as possible, for if you can get the temperature down another ten degrees, it will double the storage life again.
