Yes it can, but in a microwave safe container and I would personally cover the container since if the honey gets on the inside of the microwave it will not be easy to clean up. Be aware that heating honey destroys the healthful enzymes contained in it. It can be more healthful to eat raw honey. Microwaving honey can also alter its taste. To make hardened honey return to a liquid state, put the container in a bowl of hot water for 15 minutes.

Is honey and cinnamon a hoax?

Honey is almost entirely composed of different sugars, with water and trace minerals. Excess sugar (and we really get enough carbohydrates of different sorts in our diet anyway) gets stored as fat. So this diet cannot work unless you reduce your food intake to compensate for the excess sugar you are consuming. Certain types of cinnamon may well have useful properties that might influence insulin levels, but probably not at the recommended concentrations. So this diet is more likely to help you gain weight, and has the added disadvantage that you'll be damaging your teeth, suppressing your immune system, and all the other health problems associated with excess sugar consumption.

Honey is not intrinsically bad for you. It is a mixture of various sugars and other compounds; about 82% sugar. It contains only trace amounts of vitamins, very little protein and no fat. In moderation, it is not a bad thing. It is only maligned because many people have too much sugar in their diet, already.

If your honey has crystallized, open the container and set it in a bowl of hot water. The crystals should return to liquid. It may take more than one try. Don't put it in the microwave or on the stove as the container may break or split, then you have a real mess.

Nope, sure doesn't. If it crystalizes while in the cupboard, it is not bad, just place the container in warm/hot water and it will thin again. This doesn't affect the taste. Honey has been used as a preservative for ages. In times that there were no refrigerators and there were no naturally cold places to use, we used honey, salt and oil for preserving food. Honey is practically a sort of sugar with a high osmotic value. This means it drains the fluids from the food that it's in. And not all bacteria or fungi can live on it. These organisms decrease the chances of food staying good. Pure honey will do a great job of preserving itself for at least months outside the refrigerator. Putting it in the fridge however won't hurt it, might preserve it even longer, but will be harder to make sandwiches from. Honey has been found it the pyramids after 2000 years and is still good. I don't think the ancient egyptians had Amana refrigerators.

Can you reconstitute honey that has crystalized?

Yes, but you must do it carefully. Loosen the jar lid but don't remove it, and heat the honey by placing the jar in a bowl of water no hotter than 45 degrees C. A good rule of thumb is to have the water no hotter than you can bear to keep your hand in. It may take a while, but eventually the crystals will dissolve. Don't be tempted to try to accelerate the process by increasing the temperature. Above about 45 degrees enzymes in the honey will start to break down some of the sugars into other substances which will give the honey a bad flavour. Some people suggest using a microwave oven, but by doing it that way it is far too easy to overheat the honey.

What is the best way to dehydrate honey?

In my quest to find a way to dehtdrate honey, I have found to ways with very little or no information. 1-Boil the honey for a few minutes on med/high and then pour it on some parchment paper and let cool, this will turn it to a resin that you can then grind or crush to powder, be careful not to let any moisture get to it or it will turn into a gummy mess. 2-Mix with corn starch and place in dehydrator or in an oven with the door open a crack on 100 degrees.
